Vegan coconut milk, strawberry, banana and peanut-butter smoothie bowl

One of my favourite meals in the day is having a smoothie bowl. I’ve been wanting to get my macros from plants rather than relying on supplements.

For breakfast, I’ll usually take a smoothie bowl and add some flavoured protein powder to the mix.

What I’ve been aiming to do instead is to get that same amount of protein from plant sources.

  • Add 100g of oats to a bowl and microwave in water for 3 minutes.
  • Add peanut butter, coconut milk, 1 banana and frozen strawberries to a blender and cinnamon, and blend for 30 seconds.
  • Add the mix to the bowl and top with Chia seeds.
  • Serve.

If you want additional protein, you can always add a scoop of plant-based protein powder to the mix.
