Boring salads? Never again!

My wife recently introduced me to a world of interesting salads. I never thought that I would see this day coming, since I am someone that traditionally loves to eat meats and starchy carbs. I admit that when I first started my diet, I never considered how I could have a salad option that would be filling…let alone tasty.

But she did and I want to share it with you. As you’ve seen from the other posts that I’ve shared, I want you to have access to healthy food options that are very tasty and that won’t leave you bored at the table.

So here’s how I’ve made my salads more interesting.

Chopped olives (50g)

Chopped purple onion (60g)

Salt and pepper for taste

Additional options

  • Add Chicken pieces on top (ideally chicken breast)
  • Add parmesian cheese flakes on top
  • Add Edamame

The great thing with the salad is that it is a very healthy option. But you will get lots of flavours to enjoy while you are eating it.

I personally prefer to eat the dish fresh. However, you could keep the salad for 1-2 days max. So if you like to eat salads throughout the day, you could make a batch in the morning and you can take it with you to work and store it in the office fridge.
